Preparation
- Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Drain off any excess grease.
- If desired, lightly grease the slow cooker crock.
- Add the dry rotini, browned sausage, both jars of pizza sauce, half of the pepperoni, and 2 cups of mozzarella to the slow cooker. Stir well to coat the pasta evenly.
Cooking
- Cover and cook on low for 2 1/2 to 3 1/2 hours, stirring once or twice if your slow cooker runs hot, until the pasta is tender.
- Sprinkle the remaining 1 cup of mozzarella and the rest of the pepperoni over the top. Cover again and cook for an additional 10 to 15 minutes, until the cheese is melted and the pepperoni is warmed through.
- Let the casserole rest for 5 minutes before serving.
Notes
Serve hot from the slow cooker, garnished with more pepperoni or a sprinkle of Italian herbs. Pairs well with garlic bread or a simple side salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 2 months.
