  • 2 pounds bone-in, skinless chicken thighs Ensure they're fresh or thawed if frozen.
  • 2 cups low-sodium chicken broth Using low-sodium helps control the saltiness.
  • 1 can condensed cream of chicken soup Can substitute with cream of mushroom for variation.
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans) Feel free to use different vegetable mixes.
  • 1 can refrigerated biscuit dough Choose your favorite biscuit flavor.

Preparation
  1. Place the raw chicken thighs in an even layer in the slow cooker.
  2. Whisk together the chicken broth and condensed cream of chicken soup and pour the mixture over the chicken.
  3. Sprinkle the mixed vegetables on top.
Cooking
  1. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  2. Once cooked, shred the chicken in the cooker.
  3. Stir in half the biscuit pieces and place the remaining pieces on top.
  4. Cook on HIGH for 45-60 minutes until the biscuits are done.
  5. Stir gently, add salt and pepper if necessary, and serve warm.

Notes

To store leftovers, let them cool completely. Then, place them in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months (separate biscuits if freezing). For extra flavor, add herbs and spices like garlic powder or thyme. Ensure chicken is submerged in broth for even cooking.
