  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 2 packages dry ramen noodles Keep the seasoning packets for later use.
  • 3 cups beef broth For a lighter option, consider low-sodium broth.
  • 2 cups frozen mixed vegetables Can substitute with fresh vegetables chopped into small pieces.
  • 2 tablespoons soy sauce

Preparation
  1. Add the ground beef to the slow cooker insert and break it into small crumbles.
  2. Pour in the beef broth and sprinkle in the reserved ramen seasoning packets along with the soy sauce.
  3. Cover and cook on low for 3 to 4 hours, stirring once or twice if possible.
  4. Stir in the frozen mixed vegetables and cook for an additional 15 minutes until heated through.
  5. Break the dry ramen noodles into large pieces and scatter them over the top, gently pressing them down.
  6. Cover again and cook for an additional 20 to 30 minutes until the noodles are tender and have absorbed the broth.
  7. Stir everything together, let sit for 5 minutes to thicken, then scoop into bowls and serve warm.

Notes

For added flavor, consider using low-sodium beef broth or adding chili flakes for spice. Serve warm with toppings like sliced green onions or sesame seeds.
