Slow Cooker 4-Ingredient Hobo Dinners

Main Ingredients
  • 1.5 pounds lean ground beef Can substitute with ground turkey or chicken.
  • 4 medium russet potatoes, peeled and thinly sliced Slice thinly for even cooking.
  • 3 large carrots, peeled and thinly sliced Slice thinly for even cooking.
  • 1 ounce packet dry onion soup mix

Method
 

Preparation
  1. Tear 4 large sheets of heavy-duty aluminum foil, each about 12x18 inches.
  2. Press each sheet down into a shallow tray shape and set them aside.
  3. Peel and slice the potatoes and carrots.
  4. Divide the sliced potatoes among the 4 foil trays, then top each with an even layer of sliced carrots.
  5. In a bowl, mix the ground beef with the onion soup mix. Divide the mixture into 4 equal portions and shape each into a patty.
  6. Place one patty on top of the vegetables in each tray.
Cooking
  1. Set the trays in a slow cooker and cover it with the lid.
  2. Cook on LOW for 6-7 hours or on HIGH for 3 1/2-4 hours until the vegetables are tender and the beef is cooked through.
  3. Carefully remove the trays and serve immediately with the cooking juices spooned over the top.

Notes

Store leftovers in an airtight container and refrigerate for up to 3 days, or freeze for up to 3 months. Reheat in microwave or stovetop, adding water if needed.
