Preparation
- Lightly coat the inside of your slow cooker if needed.
- Spread the carrots in an even layer across the bottom of the slow cooker.
- Place the chicken breasts on top of the carrots in a single layer.
- Spoon the condensed cream of chicken soup over the chicken.
- Sprinkle the dry onion soup mix evenly across the top.
Cooking
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is very tender and the carrots are soft.
- Serve hot, spooning plenty of the cooking juices over the chicken and carrots.
Notes
For a thicker sauce, remove the lid during the last 30 minutes of cooking to let some liquid evaporate. Add herbs like thyme or parsley for more flavor. Do not overcrowd the slow cooker; if doubling the recipe, it may require more cooking time. If there are leftovers, store in an airtight container for up to 3 days in the refrigerator, or freeze for up to 3 months. Thaw overnight before reheating.
