Ingredients
  

  • 1 lb lean ground beef
  • 1 small head of green cabbage shredded (about 6 cups)
  • 2 medium carrots shredded or julienned
  • 3 green onions sliced (whites and greens separated)
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sriracha optional
  • 1 tbsp olive oil
  • Sesame seeds for garnish

Method
 

  1. In a large skillet or wok, heat olive oil over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it into small crumbles. Drain any excess fat.
  3. Stir in the garlic, ginger, and the white parts of the green onions. Cook for 1 minute until fragrant.
  4. Add the shredded cabbage and carrots to the skillet.
  5. Stir-fry for 5-7 minutes until the cabbage is tender-crisp.
  6. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and sriracha.
  7. Pour the sauce over the beef and vegetable mixture, tossing to coat everything evenly.
  8. Cook for another 1-2 minutes to allow the flavors to meld.
  9. Garnish with the green parts of the sliced onions and sesame seeds.
  10. Serve hot on its own or over rice.
