Ingredients

For the Sandwich
  • 4 pieces English muffins, split
  • 4 pieces breakfast sausage patties
  • 4 pieces large eggs
  • 4 slices cheddar cheese or American cheese
  • 2 tablespoons butter, divided
  • 1 tablespoon milk (optional, for fluffier eggs)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon nonstick cooking spray or oil

Method

Cooking
  1. Heat a large skillet over medium heat. Cook the sausage patties for 4-5 minutes per side, or until browned and fully cooked. Transfer to a plate and keep warm.
  2. While the sausage cooks, split the English muffins and toast them until lightly golden.
  3. In a small bowl, whisk together the eggs, milk (if using), salt, and pepper.
  4. Melt 1 tablespoon of butter in a nonstick skillet over medium-low heat. Pour in the eggs and gently stir until soft and just set, about 3-4 minutes.
  5. Place a slice of cheese over each portion of eggs during the last minute of cooking, allowing it to melt slightly.
  6. Spread the remaining butter on the toasted English muffins, if desired.
  7. Assemble each sandwich by placing a sausage patty on the bottom half of an English muffin, followed by the cheesy egg. Top with the remaining muffin half.
  8. Serve immediately while warm, or wrap each sandwich in foil or parchment paper for an easy grab-and-go breakfast.

Notes

To save time in the morning, you can cook the sausage and eggs the night before. Feel free to add veggies like spinach or bell peppers to the eggs for extra nutrition. Experiment with different types of cheese, such as pepper jack or Swiss, to change the flavor profile of your sandwich.
