Santa Fe Baked Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts (approx. 6oz each)
  • 1 cup salsa , mild or medium
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen whole kernel corn
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 1 cup shredded Monterey Jack cheese
  • 0.25 cup fresh cilantro, chopped

Method
 

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Arrange chicken breasts in a single layer in a lightly greased 9x13 inch baking dish.
  3. Season both sides of the chicken with chili powder and ground cumin.
  4. In a medium bowl, combine the salsa, black beans, and corn.
  5. Spread the salsa mixture evenly over the chicken breasts.
  6. Bake for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
  7. Distribute the shredded cheese over the chicken and bake for an additional 2 to 3 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.
