  • 2 pounds small to medium white potatoes, scrubbed and halved lengthwise
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder

Preparation
  1. Preheat your oven to 425°F (220°C). Place a metal baking sheet or roasting pan on the middle rack while the oven heats.
  2. Scrub the potatoes under cool running water and pat dry. Cut each potato in half lengthwise.
  3. In a large bowl, combine olive oil, kosher salt, black pepper, and garlic powder. Mix well.
  4. Add potato halves to the bowl and toss until coated.
Cooking
  1. Carefully remove the hot baking sheet, arrange the potatoes cut side down in a single layer, and roast for 25 to 30 minutes until golden brown and tender.
  2. Remove from the oven, let sit for 3 to 5 minutes, then serve hot, seasoning with additional salt and pepper as needed.

Notes

Cut the potatoes into uniform sizes for even cooking. Don't overcrowd the baking sheet for optimal roasting. You can adjust the seasoning to your taste.
