  • 4 pieces raw chicken leg quarters about 2 1/2–3 pounds total
  • 2 tablespoons vegetable oil or any neutral cooking oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place a clean 9x13-inch glass baking dish on the counter.
  3. Pat the raw chicken leg quarters dry with paper towels.
  4. Drizzle the vegetable oil over the bottom of the baking dish. Add the chicken quarters in a single layer, skin side up.
  5. Sprinkle the salt, black pepper, and garlic powder evenly over the chicken. Rub the seasoning gently into the skin.
Cooking
  1. Bake for 45 minutes without covering.
  2. After 45 minutes, spoon some of the hot pan juices over the chicken. Continue baking for another 20–30 minutes, or until the chicken reaches 165°F (74°C).
  3. Let the chicken rest for 5–10 minutes before serving.

Notes

Make sure to pat the chicken dry for crispier skin. You can add other spices or herbs like paprika or thyme for added flavor. For a more golden color, broil the chicken for the last few minutes of cooking. Leftover chicken can be stored in an airtight container for up to 3 days in the refrigerator or up to 3 months in the freezer.
