  • 1 cup creamy peanut butter Crunchy peanut butter can be used for added texture.
  • 1/2 cup honey Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips Dark chocolate chips can be used for a healthier option.
  • 1 tablespoon coconut oil or shortening Used for melting chocolate.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the peanut butter, honey, vanilla, and salt. Stir until smooth and well combined.
  3. Add the crushed pretzels and gently fold until they are evenly coated.
  4. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, shaping them into small clusters.
Chocolate Coating
  1. Melt the chocolate chips with the coconut oil in the microwave in 20-second intervals, stirring between each, until smooth.
  2. Drizzle the melted chocolate over each cluster, or dip the tops into the chocolate for a thicker coating.
Chilling
  1. Refrigerate for about 30 minutes, or until the clusters are firm.

Notes

Store in an airtight container in the refrigerator. They can last for about a week but are best enjoyed fresh.
