Ingredients

Main Ingredients
  • 6 medium potatoes, peeled and thinly sliced Slice thinly for even cooking.
  • 2 cans (10.75 ounces each) condensed tomato soup You can substitute with cream of mushroom soup for a different taste.
  • 1 medium onion, thinly sliced Slice thinly for better cooking.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease a 9x13 inch glass baking dish.
  2. Spread a thin spoonful of tomato soup in the bottom of the dish.
  3. Layer some sliced potatoes and onions over the soup.
  4. Spoon over more tomato soup and repeat the layers until all ingredients are used, finishing with soup on top.
Baking
  1. Cover the dish tightly with foil and bake for 1 hour.
  2. Remove the foil and continue baking for 20 to 30 minutes more, until the potatoes are fork-tender and the top is bubbling with a few browned spots.
Serving
  1. Let the casserole rest for 10 minutes before serving to allow the layers to settle and the sauce to thicken slightly.

Notes

For an extra cheesy touch, sprinkle cheese on top before the final baking phase. You can also add cooked bacon or sausage for extra flavor.
