Poor Man’s Burnt Ends

Poor man’s burnt ends are a quick and budget-friendly BBQ dish made with smoked sausage instead of brisket. The sausage cooks low and slow, then gets coated in BBQ sauce, brown sugar, butter, and honey. This creates a thick, sticky glaze with sweet and smoky flavor.

Ingredients
  

  • 2 lbs smoked sausage beef or pork
  • 1 cup BBQ sauce sweet and smoky
  • 1/2 cup brown sugar packed
  • 4 tablespoons butter
  • 2 tablespoons honey optional
  • 2 tablespoons BBQ rub

Method
 

  1. Prep
  2. Slice sausage into bite-sized pieces. Place in a foil pan. Add BBQ rub and mix well.
  3. First Cook
  4. Cook at 250–275°F (120–135°C) for 1 hour. Sausage starts to brown.
  5. Add Sauce
  6. Add BBQ sauce, brown sugar, butter, and honey. Stir to coat all pieces.
  7. Finish
  8. Cook another 30–45 minutes. Sauce thickens and turns sticky.
  9. Rest & Serve
  10. Let sit 5–10 minutes before serving. Sauce thickens more.
