Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9 by 5 inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
- Stir the grated zucchini into the wet mixture.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in the chopped pistachios and white chocolate chips, reserving some pistachios for topping.
Baking
- Pour the batter into the loaf pan and sprinkle the reserved pistachios on top.
- Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 to 15 minutes. Then transfer it to a wire rack to cool for another 20 minutes before slicing.
Notes
Store leftover bread in an airtight container at room temperature for up to three days. For longer storage, wrap tightly and freeze for up to three months. Thaw at room temperature before enjoying.
