Ingredients

Main Ingredients
  • 8 oz sharp cheddar cheese, freshly shredded Use fresh cheddar instead of pre-shredded for better texture.
  • 4 oz jarred pimentos, drained and finely chopped
  • ½ cup mayonnaise For a healthier version, use Greek yogurt instead of mayonnaise.

Method

Preparation
  1. Freshly shred the cheddar for the smoothest, creamiest texture.
  2. Add the shredded cheddar, chopped pimentos, and mayonnaise to a medium mixing bowl.
  3. Stir everything together until the cheese is evenly coated and the pimentos are distributed throughout. For a smoother spread, mash the mixture slightly with a fork as you stir.
  4. Cover and refrigerate for about 30 minutes to allow the flavors to blend and the mixture to firm up.
  5. Give the pimento cheese a quick stir before serving.

Notes

Pimento Cheese Spread can be served on crackers or toasted bread, as a sandwich filling, or as a dip with fresh veggies or pretzels. It can be stored in an airtight container in the refrigerator for up to a week. Stir or add a little extra mayonnaise if it gets thick.
