Ingredients

Main Ingredients
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 tbsp unsalted butter
  • 1 1/2 cups pecan halves or chopped pecans
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Method

Preparation
  1. Prepare a baking sheet by lining it with parchment paper or lightly greasing it and set aside.
  2. In a medium saucepan, combine sugar, corn syrup, water, and salt. Heat over medium heat, stirring until the sugar dissolves.
  3. Once the sugar dissolves, stop stirring. Let the mixture simmer until it reaches a deep golden color (about 300°F or 150°C if using a thermometer).
  4. Stir in the butter until melted, then add the pecans and cook for 1 to 2 minutes, stirring gently.
  5. Remove from heat and quickly stir in vanilla and baking soda (the mixture will foam slightly).
  6. Immediately pour the mixture onto the prepared tray and spread it thinly with a spatula.
  7. Let cool completely (about 20 minutes) and then break into irregular pieces.

Notes

Store pecan pralines in an airtight container at room temperature for about 1 to 2 weeks. Avoid refrigerating to maintain their texture. Variations include using different nuts or adding spices.
