Preparation
- Chill a medium or large glass mixing bowl and the beaters in the refrigerator for at least 15 minutes.
- Rinse the blueberries and raspberries under cool water, then pat them dry. If the berries are tart, toss them with lemon juice and granulated sugar, and let sit for 10 minutes.
- Cut the chilled pound cake into bite-sized cubes.
Making the Whipped Cream
- In the chilled mixing bowl, pour in heavy whipping cream, add powdered sugar, vanilla extract, and a pinch of salt, and beat until soft peaks form.
- Fold the majority of the berries into the whipped cream, reserving some for garnish.
Assembling the Trifle
- In a trifle bowl or glass baking dish, layer pound cake cubes and berry-studded whipped cream, alternating until all is used.
- Scatter reserved berries on top, cover loosely with plastic wrap, and refrigerate for at least 2 hours.
Serving
- Serve in bowls, ensuring each has cake, cream, and berries.
Notes
For best flavor, use fresh, ripe berries. Allow the trifle to chill for at least 2 hours before serving. For a lighter version, consider using a lower-fat whipped topping or substituting the pound cake with angel food cake.
