  • 2 large russet potatoes, scrubbed clean and sliced very thin
  • 2 tablespoons olive oil
  • 1/2 cup finely grated parmesan cheese
  • 1 tablespoon fresh rosemary, finely chopped

Method
 

Preparation
  1. Preheat your oven to 400 degrees F and line a large baking sheet with parchment paper.
  2. Slice the potatoes into very thin rounds, about 1/8 inch thick.
Mixing
  1. In a large bowl, toss the potato slices with olive oil.
  2. Sprinkle in the parmesan and chopped rosemary, then toss again until the potatoes are evenly coated.
Baking
  1. Arrange the slices in a single layer on the baking sheet.
  2. Bake for 18 to 25 minutes, flipping once halfway through, until golden brown and crisp.
  3. Let them rest for 2 to 3 minutes before serving warm.

Notes

For the best crispiness, make sure to cut the potato slices very thin and don’t overcrowd the baking sheet for even baking. You can experiment with different seasonings, like garlic powder or paprika.
