  • 4 large large russet potatoes, peeled and diced small
  • 1 each green bell pepper, diced
  • 1 medium yellow onion, diced

  1. Preheat the oven to 425°F. Line a large baking sheet or shallow roasting pan with foil for easy cleanup, and pour the vegetable oil onto the pan.
  2. Add the diced potatoes, bell pepper, and onion to the prepared pan. Toss everything well so the vegetables are coated with the oil and spread them into an even layer.
Cooking
  1. Bake for 25 minutes, then carefully stir and turn the potatoes with a spatula so they brown evenly.
  2. Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the potatoes are tender inside and nicely browned and crisp around the edges.
  3. Serve hot straight from the pan or transfer to a serving bowl.
