  • 2 pounds russet potatoes, peeled Ensure potatoes are evenly sliced
  • 8 ounces muenster cheese, sliced or shredded Can be substituted with other cheeses
  • 2 tablespoons mixed fresh herbs, finely chopped Herbs like parsley, chives, or dill work well
  • 2 tablespoons melted butter Used for brushing the potato tiles

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Lightly brush a baking sheet or rectangular baking dish with a little of the melted butter.
  2. Slice the peeled potatoes into even planks about 1/4 inch thick and trim edges to create neat rectangular tiles. Pat them dry with a kitchen towel.
  3. Arrange the potato tiles in a single layer on the prepared pan and brush the tops with the remaining melted butter.
Baking
  1. Bake for 20 to 25 minutes, until the bottoms are lightly golden and the potatoes are beginning to turn tender.
  2. Remove the pan from the oven, top each tile with muenster cheese, and sprinkle the chopped herbs over the top.
  3. Return to the oven and bake for an additional 8 to 10 minutes until the cheese is melted and the potatoes are fully tender with crisp golden edges.
Serving
  1. Transfer to a platter and serve warm, ideally as a side dish with grilled meats or a simple salad.

Notes

Ensure potato slices are even for consistent cooking. Feel free to experiment with different herbs and toppings for variety. These tiles can be broiled briefly for extra crunch.
