Oven-Baked Chicken Enchiladas

Ingredients
  

  • 2 cups cooked shredded chicken breast
  • 8 corn tortilla s
  • 2 cups red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 0.5 cup diced yellow onion
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 1 tablespoon vegetable oil
  • 0.25 cup chopped fresh cilantro

Method
 

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a medium bowl, combine shredded chicken, cumin, chili powder, and 0.25 cup of the enchilada sauce.
  3. Heat oil in a skillet over medium heat and sauté onions until translucent, then add to chicken mixture.
  4. Briefly warm tortillas in a dry skillet or microwave to make them pliable.
  5. Spread 0.5 cup of enchilada sauce on the bottom of a 9x13 inch baking dish.
  6. Place approximately 0.25 cup of chicken mixture and 1 tablespoon of cheese in the center of each tortilla, roll tightly, and place seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining shredded cheese.
  8. Bake for 20 minutes or until the cheese is melted and bubbling.
  9. Garnish with fresh cilantro before serving.
