Ingredients

Main Ingredients
  • 1 pound ground beef Lean ground beef recommended

  • 12 small corn tortillas Can be substituted with flour tortillas if preferred

  • 1 cup shredded lettuce
  • to taste Sour cream For serving

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning and follow package instructions for preparation.
  4. Lightly grease a muffin tin and press a corn tortilla into each cup to form a shell.
  5. Fill each shell with the seasoned beef mixture and top with cheese.
Baking
  1. Bake for about 10-15 minutes or until the tortillas are golden and the cheese has melted.
  2. Remove from the oven and top with diced tomatoes, shredded lettuce, and a dollop of sour cream before serving.

Notes

If you have leftovers, let them cool, then store them in an airtight container in the refrigerator. They can last for 2-3 days. To reheat, simply place them in the oven for a few minutes until warmed through. For extra crunch, bake the tortilla cups longer before adding the filling.
