Preparation
  1. Preheat your oven to 400 degrees F and lightly grease a large sheet pan or line it with parchment for easier cleanup.
  2. Spread the cubed red potatoes on the sheet pan.
  3. Pour the bottled ranch dressing over the top and toss well to coat all potato pieces evenly.
Cooking
  1. Spread the potatoes into a single layer and bake for 35 to 40 minutes, stirring once halfway through, until the potatoes are tender and starting to turn golden around the edges.
  2. Sprinkle the shredded cheddar cheese and bacon bits evenly over the hot potatoes.
  3. Return the pan to the oven for 5 to 7 minutes, or until the cheese is melted.
  4. Let the potatoes rest for 2 to 3 minutes before serving so the cheese can settle, then scoop and serve warm.
