  • 2 medium zucchini, halved lengthwise and sliced into half-moons
  • 5.2 ounces Boursin garlic & fine herbs cheese (1 standard round) Can substitute with other creamy cheeses.
  • 2.5 cups low-sodium vegetable or chicken broth (or water), plus more as needed Ensure enough liquid to cook the pasta.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a medium glass casserole dish.
  3. Scatter the uncooked pasta evenly over the bottom of the dish.
  4. Spread the sliced zucchini over the top of the pasta.
  5. Place the whole round of Boursin cheese in the center of the dish on top of the pasta and zucchini.
  6. Pour the broth evenly over everything, ensuring most of the pasta is submerged.
Cooking
  1. Cover with foil and bake for 25 minutes.
  2. Remove the foil and stir gently.
  3. Bake uncovered for another 10–15 minutes, stirring once halfway through.

  5. Let it sit for 3–5 minutes before serving.
