Preparation
  1. Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. Arrange the potato rounds on the baking sheet, drizzle with olive oil, and toss lightly until coated. Spread into a single layer.
Cooking
  1. Bake for 20 to 25 minutes, flipping once halfway through, until the potatoes are tender and golden brown around the edges.
  2. Top each potato round with a small piece of brie and return the pan to the oven for 3 to 5 minutes, until the cheese is soft and melty.
  3. Transfer the bites to a serving plate and spoon a small dollop of apple butter over each one. Serve warm.

Notes
