Ingredients

Main Ingredients
  • 12 ounces wide egg noodles, uncooked
  • 1 packet ranch seasoning mix, about 1 ounce
  • 2 cans condensed cream of chicken soup, 10.5 ounces each
  • 4 cups chicken broth
Optional Ingredients
  • 1-2 cups shredded cheddar or mozzarella cheese Optional for added richness
  • 2-3 cups cooked shredded chicken Optional for extra heartiness
  • 1 cream of mushroom soup Optional substitute for cream of chicken
  • black pepper and parsley For seasoning and garnish

Method

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit and lightly grease a 9×13-inch casserole dish.
  2. Spread the uncooked wide egg noodles evenly in the prepared casserole dish.
  3. Sprinkle the ranch seasoning packet evenly over the noodles.
  4. In a medium bowl, whisk together the condensed cream of chicken soup and chicken broth until smooth, then pour the mixture evenly over the seasoned noodles.
Baking
  1. Cover the dish tightly with foil and bake for 30 minutes.
  2. Remove the foil, stir the noodles well, cover again, and bake for an additional 20 to 25 minutes, or until the noodles are tender and most of the liquid has been absorbed.
  3. Let the casserole rest for 5 to 10 minutes before serving.
Serving
  1. If desired, stir in shredded cheese during the last 10 minutes of baking for extra richness.
  2. For more heartiness, add cooked shredded chicken before baking.
  3. Optionally, substitute cream of mushroom soup for cream of chicken for a different flavor.
  4. Adjust liquid as needed if the dish seems dry. Season with black pepper and top with parsley before serving.

Notes

For storage, let the casserole cool completely. Store in an airtight container in the refrigerator for up to three days. To reheat, place it in the oven at 350 degrees Fahrenheit until warmed through, or microwave individual portions.
