Preparation
- Preheat your oven to 400°F (200°C). Lightly grease a glass baking dish or line it with parchment paper.
- On a lightly floured surface, unfold and roll out one puff pastry sheet to about 1/8 inch thick. Cut it into 6 equal rectangles, then repeat with the second sheet.
- Place 1 tablespoon of jam on 6 rectangles, leaving a border around the edges.
- Brush the edges with the beaten egg.
- Place the remaining rectangles on top of the jam-covered ones and seal the edges.
- Brush the tops with the beaten egg and cut slits for steam to escape.
Baking
- Bake in the preheated oven for 15–20 minutes until golden brown.
- Let cool for 10 minutes before serving.
Notes
Store leftover puff pastry pockets in an airtight container at room temperature for best quality within 2 days. Refrigerate for up to 5 days. Reheat in the oven for a few minutes to regain crispiness. These pockets are best served warm and can be dusted with powdered sugar or served with whipped cream or ice cream.
