Ingredients

Main Ingredients
  • 4 cups shredded russet potatoes squeezed very dry
  • 1 cup finely shredded Parmesan cheese
  • 2 tablespoons olive oil

Method

Preparation
  1. Preheat the oven to 400°F and generously grease a 12-cup muffin tin.
  2. Shred the potatoes if needed, then place them in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a mixing bowl, toss the dried shredded potatoes with the Parmesan cheese and olive oil until everything is evenly coated.
Baking
  1. Divide the mixture evenly among the muffin cups, then press it firmly into the bottom and up the sides of each cup to form little nests.
  2. Bake for 25 to 30 minutes, or until the edges are deeply golden and crisp.
  3. Let them cool in the pan for 5 minutes before carefully loosening and lifting them out.

Notes

These nests are best served warm and can be enjoyed plain or with a favorite dipping sauce like sour cream, ketchup, or ranch dressing. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warm.
