  • 2 cans (12-ounce) cans corned beef, chilled Canned corned beef is easier to crumble.
  • 2 1/2 pounds russet potatoes, peeled and cut into 1-inch chunks Russet potatoes provide a great texture.
  • 1 cup whole milk (plus 1–2 tablespoons more if needed) Adjust milk for desired creaminess.

Preparation
  1. Preheat your oven to 400°F (200°C) and set a 9-inch glass pie dish on a baking sheet.
  2. In a large pot, cover the chopped potatoes with cold water and bring to a boil. Cook until very tender, about 12–15 minutes.
  3. Drain the potatoes and return them to the pot. Mash with 1 cup of milk until smooth, adding more milk if needed for a creamier texture.
Assembly and Baking
  1. Spoon half of the mashed potatoes into the pie dish and scatter crumbled corned beef over the top.
  2. Add the remaining mashed potatoes on top.
  3. Bake for 30–35 minutes until golden brown. Let it rest for 10 minutes before slicing.

Notes

Serve hot with a simple side salad or steamed vegetables. You can add ketchup or mustard for extra flavor. Store any leftovers covered in the refrigerator for 3-4 days.
