Preparation
- Preheat the oven to 350 degrees F and lightly grease a medium casserole dish or a 9x13 inch baking dish.
- Spread the drained spinach evenly across the bottom of the prepared dish.
- Spoon the condensed cream of chicken soup over the top and spread it gently to cover the spinach.
- Arrange the chicken breasts over the spinach mixture in a single layer, pressing them down slightly so they settle into the sauce.
Baking
- Cover the dish with foil and bake for 30 minutes.
- Uncover and continue baking for 15 to 20 minutes more, or until the chicken is cooked through and the top is bubbling and lightly golden.
Serving
- Let the casserole rest for 5 to 10 minutes before serving so the sauce can settle slightly.
- When plating, spoon the creamy spinach around each piece of chicken.
Notes
This casserole can be customized by adding cooked mushrooms, diced tomatoes, or cheese for extra flavor. It pairs well with a side salad or crusty bread. Leftover casserole can be stored in an airtight container in the refrigerator for up to three days.
