Preparation
- Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top if you have one.
- Pat the pork tenderloin dry with paper towels. Sprinkle the seasoned salt or grill seasoning all over the pork.
- Lay the bacon slices slightly overlapping in a row. Place the seasoned pork across the bacon and roll it up tightly.
- Transfer the wrapped pork to the baking sheet, seam side down.
Cooking
- Bake for 25 to 35 minutes until the internal temperature reaches 140°F to 145°F.
- If the bacon isn’t crisp enough, broil for 2 to 4 minutes.
- Let the pork rest for 5 to 10 minutes, then slice and serve.
Notes
Serve this dish hot, sliced into medallions. It pairs wonderfully with steamed vegetables, mashed potatoes, or a fresh salad. For an extra touch, drizzle some balsamic glaze or your favorite barbecue sauce on top before serving. To store leftovers, let the pork cool completely before placing it in an airtight container.
