- Place the orange gelatin in a large mixing bowl. Pour in the boiling water and whisk continuously until the gelatin crystals are completely dissolved.
- Stir in the cold water. Mix well, then allow the gelatin mixture to cool for several minutes.
- Whisk the instant vanilla pudding mix into the cooled gelatin until smooth and slightly thickened.
- Gently fold in the thawed whipped topping using a spatula.
- Carefully fold in the well-drained mandarin oranges and mini marshmallows.
- Cover the bowl and refrigerate for 2 to 4 hours, or until the salad is cold and nicely set.
Serving
- Serve chilled as a side dish or dessert, spooning into individual bowls or a pretty serving dish.
Notes
Make sure to let the gelatin cool before adding the pudding mix to avoid clumping. Use a spatula for folding in the whipped topping. For a richer taste, use homemade whipped cream. Store leftovers in an airtight container for 3 to 5 days.
