Ingredients
  

For the Peach Filling
  • 6 cups frozen sliced peaches, thawed and drained Make sure to drain well after thawing to avoid excess moisture.
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
For the Crisp Topping
  • 1 cup old-fashioned rolled oats Optional: Add chopped nuts for extra crunch.
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat the oven to 375 F (190 C). Lightly grease a 9x9 inch baking dish.
  2. In a large bowl, combine the thawed peaches, granulated sugar, flour, vanilla, cinnamon, and lemon juice. Stir gently until the peaches are evenly coated.
  3. In another bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture becomes crumbly and evenly moistened.
Baking
  1. Spread the peach mixture evenly into the prepared baking dish.
  2. Sprinkle the crisp topping over the peaches, covering the surface completely.
  3. Bake for 45-50 minutes, or until the peach filling is bubbling around the edges and the topping is golden brown.
  4. Cool slightly for 10-15 minutes before serving.

Notes

Serve warm or at room temperature, excellent with vanilla ice cream or whipped cream. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
