  • 3 cups Cooked Chicken, shredded Use rotisserie chicken for quicker preparation.
  • 8 ounces Spaghetti or Linguine Any pasta can be used as per preference.
  • 2 tablespoons Butter
  • 2 cloves Garlic, minced Adjust to taste.
  • 8 ounces Mushrooms, sliced
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream Can be substituted with half-and-half or plant-based cream for a lighter version.
  • 1 cup Parmesan Cheese, grated Freshly grated will yield better flavor.
  • 1 cup Mozzarella Cheese, shredded For topping.
  • 2 tablespoons Flour
  • to taste Salt Adjust as needed.
  • to taste Pepper Adjust as needed.
  • optional Parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F) and grease a large baking dish.
  2. Boil salted water and cook spaghetti until al dente, then drain.
  3. In a skillet, melt butter, add garlic and mushrooms, and cook until tender.
  4. Add flour to the mushroom mixture, stir, then gradually pour in chicken broth and add heavy cream; simmer until thickened.
  5. Stir in parmesan cheese, salt, and pepper, adjusting seasoning to taste.
Assembly
  1. Combine cooked pasta and chicken with the sauce, mixing gently.
  2. Transfer to the baking dish.
  3. Top with mozzarella cheese.
Baking
  1. Bake for 25-30 minutes until golden.
  2. Let sit for 5-10 minutes before serving.

Notes

Serve hot from the oven, garnished with parsley if desired. It pairs well with a simple green salad and crusty bread. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat thoroughly before serving.
