Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
Filling
  • 2 cups cream cheese, softened Make sure it is softened for easy mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream Whip until stiff peaks form.
Topping
  • 2 cups fresh blueberries You can switch to other fruits if desired.
  • 1/4 cup sugar For sweetening the blueberries.

Preparation
  1. In a bowl, combine graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator.
  2. In a large mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Spread the cream cheese mixture over the chilled crust and smooth the top. Chill for at least 4 hours or until set.
Blueberry Topping
  1. Combine blueberries and sugar in a small saucepan. Cook over medium heat until the blueberries soften and release their juices.
  2. Cool the blueberry mixture and then pour it over the cheesecake before serving.

Notes

Serve chilled and enjoy plain or with whipped cream. Store leftovers in the refrigerator for 3 to 4 days. For a zestier flavor, add a splash of lemon juice to the blueberry topping.
