Muenster Cheese Potato Bites

Prep Time 15 minutes
Cook Time 35 minutes
Servings: 6

Ingredients

  • 2 lb Russet potatoes peeled
  • 2 tbsp unsalted butter melted and divided
  • 8 oz Muenster cheese sliced or shredded
  • 2 tbsp mixed fresh herbs finely chopped (parsley, chives, or dill)
  • 1/2 tsp salt optional, to taste
  • 1/4 tsp freshly ground black pepper optional, to taste

Method

  1. Preheat the oven to 400°F (200°C). Lightly butter a baking sheet or shallow baking pan.
  2. Peel the Russet potatoes and cut them lengthwise into planks about 1/4 inch thick. Trim each plank into rectangular bite-sized tiles so they bake evenly.
  3. Pat the potato tiles thoroughly dry with a clean towel.
  4. Arrange the tiles in a single layer on the prepared pan, leaving a little space between them.
  5. Brush the tops with the remaining melted butter. Season with salt and pepper, if using.
  6. Bake for 20 to 25 minutes, until the potatoes are tender and the edges begin to turn golden.
  7. Place a small slice of Muenster or a compact mound of shredded cheese on each potato tile. Sprinkle with the chopped herbs.
  8. Return the pan to the oven and bake for another 8 to 10 minutes, until the cheese is melted and lightly golden.
  9. Let the bites cool for a minute or two, then serve warm.
