Ingredients

Main Ingredients
  • 2.5 to 3 pounds bone-in, skin-on chicken thighs (about 6–8 pieces)
  • 1 cup bottled French or Catalina salad dressing
  • 1 cup apricot preserves (or apricot jam)
  • 1 ounce packet dry onion soup mix
  • 1/2 teaspoon kosher salt (or to taste)

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry and season them with kosher salt.
  3. Arrange the chicken thighs in a glass baking dish, skin-side up.
Mixing
  1. In a bowl, whisk together the salad dressing, apricot preserves, and onion soup mix.
  2. Pour the mixture over the chicken, making sure each piece is well coated.
Baking
  1. Bake uncovered for 45 to 55 minutes, or until the chicken is cooked through and golden.
  2. Let the chicken rest for 5 to 10 minutes before serving, spooning the sauce over the top.

Notes

For extra crispiness, you can broil the chicken for the last few minutes of baking. Adjust apricot preserves for desired sweetness, and feel free to add chili flakes for spice. Serve with roasted vegetables, rice, or a green salad.
