Ingredients
  

Vegetables
  • 2 medium cucumbers, thinly sliced For the best texture, use a sharp knife.
  • 1 medium red onion, thinly sliced
  • 3 medium tomatoes, chopped
Dressing
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar Can substitute with apple cider vinegar or white wine vinegar.
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped For added flavor.

Method
 

Preparation
  1. In a large bowl, combine the cucumbers, onion, and tomatoes.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, sugar, salt, and black pepper until the sugar dissolves.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Sprinkle the fresh dill over the salad and toss again.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  6. Serve chilled and enjoy!

Notes

Store any leftover salad in an airtight container in the refrigerator. It will keep well for up to 2 days. The vegetables may release some water and become softer over time. Great as a side dish or a light main course.
