Ingredients
  

Pasta
  • 2 cups elbow macaroni dry
Sauce Ingredients
  • 2 tbsp olive oil or butter
  • 1 small onion finely chopped optional but recommended
  • 2 cloves garlic minced
  • 1 can 400g / 14 to 15 oz diced tomatoes
  • 1 cup tomato sauce or crushed tomatoes
  • 1/2 cup water or vegetable broth
  • 1 tsp sugar
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp paprika optional
  • 1/4 tsp chili flakes optional
  • 2 tbsp fresh parsley chopped for garnish
  • Grated cheese optional for serving

Method
 

Preparation
  1. Boil a pot of salted water and cook the macaroni until al dente according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil or butter over medium heat. Add onion and sauté for 3 to 4 minutes until soft. Stir in garlic and cook for 30 seconds until fragrant.
Cooking
  1. Add diced tomatoes, tomato sauce, and water or vegetable broth. Stir in sugar, salt, pepper, paprika, and chili flakes. Let simmer for 10 to 12 minutes, stirring occasionally, until slightly thickened.
  2. Add the cooked macaroni to the tomato sauce and stir well so the pasta absorbs the flavor. Simmer together for 2 to 3 minutes.
  3. Remove from heat, garnish with fresh parsley, and add grated cheese on top if desired.

Notes

Serve Macaroni and Tomatoes hot, straight from the pan. You can enjoy it on its own or pair it with a side salad for a complete meal. For added flavor, consider including cooked vegetables like bell peppers or spinach, or try different types of cheese like mozzarella or parmesan for a unique taste. If you want a creamier consistency, stir in a splash of cream or milk before serving.
