Preparation
- Place the finely chopped sugar-free dark chocolate or chocolate chips in a completely dry heatproof bowl.
- In a small saucepan, heat the heavy cream just until it is hot and steaming, but not boiling.
- Pour the hot cream over the chocolate and let it sit undisturbed for 3 minutes to allow the chocolate to soften.
- Stir slowly from the center outward until the mixture becomes smooth and glossy.
- Chill the mixture for about 2 hours, or until it’s firm enough to scoop.
- Using a small cookie scoop or a spoon, portion out the chocolate and quickly roll it between cool hands to form smooth balls.
- Refrigerate the truffles for another 15 to 20 minutes before serving.
Serving
- Serve chilled or let them sit out for a few minutes to soften slightly in the center.
- Optionally, roll the truffles in unsweetened cocoa powder, finely chopped nuts, or unsweetened shredded coconut after shaping.
Notes
Keep everything dry to prevent the chocolate from seizing. For neat and uniform truffles, try using a cookie scoop or a melon baller. Optional flavor additions include vanilla or almond extracts and a pinch of sea salt for a salted truffle variation. Store in an airtight container in the refrigerator for up to a week, separated by parchment paper to prevent sticking.
