Lemon Rosemary Garlic Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic , minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large lemon , zested and juiced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.25 cup chicken stock

Method
 

  1. Preheat oven to 400 degrees Fahrenheit (204 degrees Celsius).
  2. Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
  3. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, and chopped rosemary.
  4. Place chicken in a shallow baking dish and pour the lemon-herb mixture over each breast.
  5. Pour the chicken stock into the bottom of the baking dish.
  6. Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
  7. Remove from oven and let the chicken rest for 5 minutes before serving.
