Ingredients
  

Pork and Seasoning
  • 1 piece Pork shoulder Cost-effective cut of meat
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil For rubbing the meat
Liquid Ingredients
  • 1 cup Apple cider vinegar
  • 1 cup Chicken broth
  • 2 tablespoons Raspberry jam (optional) For glazing
Herbs
  • 1 tablespoon Fresh herbs (thyme, rosemary, optional) For garnish

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Rub the pork shoulder with olive oil, salt, black pepper, garlic powder, and onion powder.
  3. In a roasting pan, place the pork shoulder and add apple cider vinegar and chicken broth to the bottom of the pan.
Cooking
  1. Cover the pan with foil and roast in the oven for about 4-6 hours, or until the meat is tender and easily pulls apart.
  2. Optionally, during the last hour of cooking, brush the pork with raspberry jam for a sweet glaze.
  3. Remove the pork from the oven, let it rest for 20 minutes, then slice and serve with pan juices and fresh herbs if desired.

Notes

Allow the pork to come to room temperature before cooking for more even roasting. Use a meat thermometer to check for doneness, the internal temperature should reach 195°F (90°C) for perfect tenderness. If you prefer a crispy crust, you can uncover the pork during the last 30 minutes of cooking. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for longer storage, up to 2-3 months.
