Preheat your oven to 375°F (190°C) and season the pork generously with salt and pepper on all sides.
Whisk the glaze by combining the honey, minced garlic, and soy sauce in a small bowl until smooth and combined.
Sear the meat in a hot skillet with olive oil for 2 minutes per side to lock in the juices and create a golden crust.
Place the onions in the bottom of a roasting dish and nestle the pork directly on top of them.
Pour the glaze over the roast, making sure to coat the onions in the excess sauce at the bottom of the pan.
Roast for 45–60 minutes, basting the meat with the pan juices halfway through for a rich, glossy finish.
Check the temp and remove the roast from the oven once the center reaches 145°F (63°C).
Rest the meat for at least 10 minutes before slicing to ensure maximum juiciness in every bite.
