Honey Garlic Meatballs with Citrus Ranch

Ingredients
  

  • 1 lb ground beef (80/20 lean)
  • 1/2 cup panko breadcrumbs
  • 1 large egg , beaten
  • 2 cloves garlic , minced
  • 1/2 tsp sal t
  • 1/4 tsp black pepper
  • 1/3 cup hone y
  • 1/4 cup soy sauce
  • 1 tbsp fresh ginger, minced
  • 1 tsp cornstarc h
  • 1 tsp cold water
  • 1/2 cup ranch dressing
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1 tbsp sliced green onions

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, salt, and pepper until just incorporated.
  3. Form the mixture into 1-inch meatballs and place on the prepared baking sheet.
  4. Bake meatballs for 15 to 18 minutes until internal temperature reaches 160°F (71°C).
  5. While meatballs bake, whisk ranch dressing, lime zest, and lime juice in a small bowl; refrigerate until serving.
  6. In a small saucepan over medium heat, whisk honey, soy sauce, and ginger; bring to a light simmer.
  7. Whisk cornstarch and water together to create a slurry, then stir into the sauce and cook for 1 to 2 minutes until thickened.
  8. Toss the baked meatballs in the honey garlic sauce until evenly coated.
  9. Garnish with green onions and serve immediately with the citrus ranch on the side.
