Preparation
  1. Hull and lightly crush the fresh strawberries in a large saucepan.
  2. Add sugar and lemon juice to the strawberries, then stir until combined.
Cooking
  1. Cook the mixture over medium heat until it starts to boil.
  2. Reduce the heat to a simmer, stirring frequently.
  3. Continue cooking for 20–30 minutes until the jam thickens.
  4. To test for doneness, place a spoonful of jam on a chilled plate and check if it wrinkles when pushed with your finger.
  5. Once thickened, cool the jam slightly and stir in optional vanilla if desired.
  6. Spoon the jam into clean jars and refrigerate.

Notes

Store the jam in the refrigerator for up to three weeks in a clean, airtight jar. For longer storage, freeze in small portions in airtight containers for up to a year. Stir frequently during cooking to prevent burning.
