Ingredients

Main Ingredients
  • 2 cups milk chocolate chips
  • 1 cup creamy peanut butter
  • 3 tablespoons unsalted butter
  • 3 cups crispy rice cereal
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt optional
Chocolate Topping
  • 1 cup milk chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

Method

Preparation
  1. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a microwave-safe bowl, combine the 2 cups of chocolate chips, peanut butter, and butter. Heat in 20-second intervals, stirring between each, until smooth and fully melted.
  3. Stir in the vanilla extract and salt, if using.
Combine
  1. Fold the crispy rice cereal into the chocolate mixture, stirring gently until every piece is evenly coated.
  2. Transfer the mixture to the prepared pan. Press it into an even layer using the back of a spoon or an offset spatula.
Topping
  1. In a separate bowl, melt the remaining 1 cup of chocolate chips with the coconut oil, stirring until smooth.
  2. Pour the melted chocolate over the cereal layer and spread evenly to create a smooth top.
Chill and Slice
  1. Refrigerate for about 1 hour, or until completely firm.
  2. Lift the bars out of the pan using the parchment paper. Slice into 16 squares with a sharp knife, wiping the blade clean between cuts for neat edges.
