  • 2 pounds ground beef (80 to 85 percent lean) Season with salt and pepper for added flavor.
  • 4 cups peeled and diced russet potatoes (about 3 to 4 medium potatoes) Cut into even pieces for even cooking.
  • 2 cups diced yellow onion (about 2 medium onions) Cut into even pieces for even cooking.
  • 2 cans (28 ounces each) crushed or diced tomatoes with juice You can add crushed red pepper flakes for some heat.

Preparation
  1. In a large skillet over medium-high heat, brown the ground beef until there is no pink left and most of the liquid has evaporated, which should take about 7 to 10 minutes.
  2. If desired, drain the excess grease from the skillet.
  3. Transfer the browned beef to a slow cooker.
  4. Layer the diced potatoes and onions on top of the beef. Do not stir.
  5. Pour the canned tomatoes over everything in the slow cooker.
Cooking
  1. Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours until the vegetables are tender.
  2. Stir gently to combine before serving hot.

Notes

Serve this dish hot right from the slow cooker. It pairs well with crusty bread or a simple green salad for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for about 3 to 4 days or frozen for up to 3 months. Make sure to reheat thoroughly before serving again.
