Preparation
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Thaw your puff pastry according to the package directions.
- Unfold your puff pastry sheet on a lightly floured surface and cut it into 6 equal rectangles.
- Spread a thin layer of Dijon mustard down the center of each rectangle, leaving a half-inch border.
- Layer on your ham and top with shredded Gruyère cheese.
- Fold the pastry to create a pocket or place a second rectangle on top and press the edges with a fork to seal.
- Whisk together the egg and a tablespoon of water to create an egg wash and brush it over the tops of the pastries.
- Sprinkle with flaky sea salt and thyme if using.
Baking
- Bake for 18-22 minutes until golden.
- Let them rest for 5 minutes before serving.
Notes
To store leftovers, let the pastries cool completely, then place in an airtight container and refrigerate for up to 3 days. Reheat in the oven to maintain crispiness. Ensure not to overfill to prevent leaking during baking.
