Grilled Steak with Caramelized Pineapple Glaze

Ingredients
  

  • 4 (8-ounce) Ribeye or New York Strip steaks
  • 2 cups fresh pineapple juice
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons low -sodium soy sauce
  • 1 tablespoon fresh ginger, finely minced
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 4 fresh pineapple rings, 1/2-inch thick

Method
 

  1. Combine pineapple juice, sugar, soy sauce, ginger, vinegar, and garlic in a saucepan.
  2. Simmer over medium heat. Reduce by half until syrupy. It should coat a spoon.
  3. Preheat your grill to high heat. Aim for about 450°F.
  4. Pat steaks dry with paper towels. Season both sides with salt and pepper.
  5. Place steaks on oiled grates. Sear 4-5 minutes per side.
  6. Brush steaks with the pineapple reduction during the last 3 minutes.
  7. Grill pineapple rings for 2 minutes per side. Look for grill marks.
  8. Transfer steaks to a platter. Let them rest for 7 minutes.
  9. Serve steaks topped with a pineapple ring. Add a drizzle of extra glaze.
