Ingredients

Main Ingredients
  • 2 slices sourdough white or whole wheat bread
  • 2 tablespoons unsalted butter, softened
  • 2 slices sharp cheddar cheese (about 2 ounces)
  • 1 slice mozzarella or Monterey Jack cheese (optional) For added flavor
  • 1 pinch garlic powder (optional) For added flavor
  • Freshly ground black pepper to taste

Method

Preparation
  1. Spread the softened butter evenly over one side of each slice of bread. If you like, sprinkle a light pinch of garlic powder over the butter.
  2. Place one slice of bread, butter-side down, into a cold nonstick skillet or cast-iron pan.
  3. Layer the cheddar cheese and optional mozzarella on top of the bread. Season lightly with black pepper.
  4. Top with the second slice of bread, butter-side up.
Cooking
  1. Heat the skillet over medium-low heat.
  2. Cook for 3 to 4 minutes, or until the bottom is golden brown and crisp.
  3. Carefully flip the sandwich with a spatula and cook for another 3 to 4 minutes, pressing gently if desired, until the second side is golden and the cheese is fully melted.
  4. Transfer the grilled cheese to a cutting board and let it rest for 1 minute before slicing in half.

Notes

Serve hot with sides like tomato soup or salad. For extra crunch, add pickles or chips. Let cool to room temperature before refrigerating any leftovers, which can be stored for up to 2 days. Reheat in a skillet or microwave before serving again.
